What's the first step?

You know when you're gearing up for a diet, and you'll "start Monday" and spend all the days leading up to that Monday eating whatever you can possibly think of because come Monday you'll never be able to eat that again? I'm kindof in that phase, except I am not actually planning a diet, per se, at least not in the losing weight sense. And what makes no sense is that I'm eating things that I DON'T EVEN WANT TO EAT. It makes me feel gross... my body is screaming "GIVE ME A VEGETABLE."

I'm working on the planning portion of transitioning to a whole food plant based diet. I've done it before, and going through all of the work to plan out meals and shopping lists is very much worth the effort. Otherwise you're eating the same plain salad over and over again, and you'll quickly lose interest. Doing this transition also begs the question whether you build up slowly or go all in. I know I can't be 100% compliant right off the bat. It's tough to immediately cut off all sugar, butter, and oil. And I think my cheese withdrawal will take some time to get through. Gotta start slowly if I'm going to make this last. Meat is easy for me to give up, I can take it or leave it. But sugar... sugar is another story. And I know sugar is the root of all evil when it comes to the food/anxiety connection. I feel a direct correlation between so many foods and my moods and the way my body feels. Sometimes it's anxious, sometimes it's low, sometimes headaches, and restless leg is a whole bitch thanks to night time ice cream.

So, first step... Decide what I will eat this week. Start slowly.

And make the damn list.
